Coconut macaroons ( a recipe from a blogger mom )

I am really glad that i discovered making coconut macaroons grace by a blogger mom cielo of Live..love...laugh. Ang dali lang pala! at ang sarap pah! I remember before, i already spotted coconut macaroons in the grocery and often buy a pack for Claudebiko ( he adore's it! ) They named it here "rocher coco"  or "congolais". In the Philippines, we can buy coconut macaroons from the grocery, bakery, specialty shops or maging sa palengke iba-iba nga lang ang version. Usually, when doing this they only use egg whites ( as my research ) but as i said i followed cielo's way of making coconut macaroons yun nga lang kinulang ang dessicated coconut ko :)
i only used 2 1/2 cup of dessicated coconut ( from the package, it shows that the grated coconuts came from vietnam )
just mixed all ingredients
used measuring spoon of 1 tablespoon because if using 1 teaspoon to make a ball form i find it "bitin"
makes 25 + 4 = 29 coconut macaroons
i like the texture! moist and chewy mainit palang nilantakan ko na :)
I bought another pack of dessicated coconut because i plan to make batches for friends. No more buying coconut macaroons in the grocery because i can make anytime at home. Thanks to Cielo!!! :)

Wow finally! Mas maganda mas konti ang coconut para moist at hindi dry kaya ako 2and 1/4 lang nilagay ko na cups instead of 3.kahapon gumawa ako sobra sa coconut ayun ang tigas hehehe.

oo nga yun nga din ang inisip ko tapos gusto ko lagyan ng pandan extract para kulay green kaso natapon ko na pala. Much better kung gamitan ko ng medyo fresh na coconut para bang macapuno effect wag ko lang ma overwork kasi baka maging bukayo ang kalabasan hehehe thanks again gagawa ako lagi nito kasi ang dali lng tapos ilalagay ko lng sya sa container para kapag gusto ko kumain nito, laging available thanks talaga sa recipe! :)
